Lemon Cashew Bread

- 3 cups all-purpose flour shopping list
- 1 teaspoon baking soda shopping list
- 1 tablespoon salt shopping list
- 1/2 teaspoon baking powder shopping list
- 3 eggs shopping list
- 1-1/2 cups sugar shopping list
- 1 cup of vegetable oil shopping list
- 1-1/2 cups Blue Bunny sour cream shopping list
- 1/2 cup fresh lemon juice shopping list
- 2 tablespoons grated lemon peel shopping list
- 1 cup chopped cashews shopping list
How to make it
- Combine flour, baking soda and baking powder; mix well and set aside. In a large mixing bowl, beat eggs and sugar. Add oil and beat well. Beat in sour cream, lemon juice and lemon peel. Add dry ingredients, beating on low speed just until combined. Fold in cashews. Spoon entire mixture into two greased 8-1/2" x 4-1/2" x 2-1/2" loaf pans. Bake at 325 degrees F for 45-50 minutes or until a wooden pick inserted in center tests clean. Cool in pan 10 minutes before removing to a wire rack.
