Pamelas Chicken And Tomatoes Over Brown Rice Recipe
I came up with this as a healthy, zesty spin on the usual chicken and rice! It is satisfying, bursting with flavor, and great for the waistline!

Ingredients
  • 3 bonesless, skinless chicken breasts
  • Extra virgin olive oil
  • Several splashes of balsamic vinegar
  • Dried parsley
  • Small dash of salt & pepper
  • 1/2 yellow onion, diced
  • 1 Tbs minced garlic
  • Large handful black olives, roughly chopped
  • 1 can fire roasated tomatoes
  • Zest of 1/2 lemon
  • Juice of 1/2 lemon
  • Brown rice

Directions
  1. Cook chicken, with lid on, over med-high heat, in EVOO, with several splashes of balsamic vinegar, a few shakes of parsley and small dash of salt & pepper. (turn chicken only once throughout cooking)
  2. Once chicken is cooked through, remove and reserve on a plate, covered with foil.
  3. In same pan, add onion, and olives...cook for 3-5 minutes.
  4. Add garlic and cook another minute.
  5. Add tomatoes and cook until heated through.
  6. Add lemon zest and juice and stir together.
  7. Squeeze a bit of lemon juice over chicken and add it, and the juice left on the plate, back to pan.
  8. Serve over brown rice
