How to make it

  • Trim excess fat from steak.
  • Place onions, peppers and garlic in bottom of 3-4 quart slow cooker and top with steak.
  • Mix salsa, oregano, chili powder, salt, and pepper in small bowl and pour over meat.
  • Top with drained black beans and corn.
  • Cover and cook on low 6-8 hours until steak is cooked through and vegetables are tender.
  • Serve over cooked rice
  • Top with shredded cheese and chopped cilantro

    The first time I made flank steak on the grill; it wasn't flank steak but skirt steak! No wonder it was so reasonable. Tough as leather, but live and learn and keep cooking. Love this recipe. Thanks for posting.
