Southwestern Flank Steak With Black Beans

- 1 ½ lbs. flank steak shopping list
- 1 onion, chopped shopping list
- 3 cloves garlic, minced shopping list
- 16 oz. jar chunky salsa shopping list
- ½ teaspoon dried oregano leaves shopping list
- 2 teaspoons chili powder shopping list
- ½ teaspoon salt shopping list
- ¼ teaspoon pepper shopping list
- 15 oz. can black beans, drained and rinsed shopping list
- 1 can shoepeg corn shopping list
- 1 red bell pepper, sliced shopping list
- 1 yellow bell pepper, sliced shopping list
- 3 cups hot cooked rice shopping list
- Shredded Monterrey Jack or pepper Jack cheese shopping list
- Chopped Fresh cilantro shopping list
How to make it
- Trim excess fat from steak.
- Place onions, peppers and garlic in bottom of 3-4 quart slow cooker and top with steak.
- Mix salsa, oregano, chili powder, salt, and pepper in small bowl and pour over meat.
- Top with drained black beans and corn.
- Cover and cook on low 6-8 hours until steak is cooked through and vegetables are tender.
- Serve over cooked rice
- Top with shredded cheese and chopped cilantro

The first time I made flank steak on the grill; it wasn't flank steak but skirt steak! No wonder it was so reasonable. Tough as leather, but live and learn and keep cooking. Love this recipe. Thanks for posting.
