Southwestern Flank Steak With Black Beans Recipe
One of those easy easy one dish meals in the crock pot. Add in some jalepeno if you like it hot!

Ingredients
  • 1 ½ lbs. flank steak
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 16 oz. jar chunky salsa
  • ½ teaspoon dried oregano leaves
  • 2 teaspoons chili powder
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 15 oz. can black beans, drained and rinsed
  • 1 can shoepeg corn
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 3 cups hot cooked rice
  • Shredded Monterrey Jack or Pepper Jack Cheese
  • Chopped Fresh Cilantro

Directions
  1. Trim excess fat from steak.
  2. Place onions, peppers and garlic in bottom of 3-4 quart slow cooker and top with steak.
  3. Mix salsa, oregano, chili powder, salt, and pepper in small bowl and pour over meat.
  4. Top with drained black beans and corn.
  5. Cover and cook on low 6-8 hours until steak is cooked through and vegetables are tender.
  6. Serve over cooked rice
  7. Top with shredded cheese and chopped cilantro

The first time I made flank steak on the grill; it wasn't flank steak but skirt steak! No wonder it was so reasonable. Tough as leather, but live and learn and keep cooking. Love this recipe. Thanks for posting.
