Fold Over Tortilla Bake

- 1 pound ground beef shopping list
- 1 large onion chopped shopping list
- 2 cans stewed tomatoes shopping list
- 1 cup enchilada sauce shopping list
- 2 teaspoons ground cumin shopping list
- 1⁄2 teaspoon salt shopping list
- 1⁄4 teaspoon pepper shopping list
- 12 flour or corn tortillas shopping list
- 6 ounces cream cheese softened shopping list
- 4 ounce can chopped green chilies drained shopping list
- 4 ounces shredded pepper jack cheese shopping list
How to make it
- Cook beef and onion over medium heat until meat is no longer pink then drain well.
- Stir in tomatoes, enchilada sauce, cumin, salt and pepper then bring to a boil.
- Reduce heat then cover and simmer 5 minutes.
- Pour half into a greased rectangular baking pan and set aside.
- Stack the tortillas and wrap in foil then warm at 350 for 10 minutes.
- Spread warm tortillas with cream cheese and top with chilies then fold in half.
- Arrange folded tortillas over meat sauce and pour remaining sauce over top.
- Cover and bake at 350 for 15 minutes.
- Uncover and sprinkle with cheese then bake 5 minutes longer.
