How to make it

  • Cook beef and onion over medium heat until meat is no longer pink then drain well.
  • Stir in tomatoes, enchilada sauce, cumin, salt and pepper then bring to a boil.
  • Reduce heat then cover and simmer 5 minutes.
  • Pour half into a greased rectangular baking pan and set aside.
  • Stack the tortillas and wrap in foil then warm at 350 for 10 minutes.
  • Spread warm tortillas with cream cheese and top with chilies then fold in half.
  • Arrange folded tortillas over meat sauce and pour remaining sauce over top.
  • Cover and bake at 350 for 15 minutes.
  • Uncover and sprinkle with cheese then bake 5 minutes longer.
