Ingredients
  • 80g butter
  • 1/2 cup honey
  • 1/4 cup brown sugar
  • 2 cups self raising flour
  • pinch salt
  • lightly beaten egg
  • 1/2 cup demerera sugar

Directions
  1. Preheat oven to 180degC. Line 2 large baking trays with baking paper.
  2. Melt butter and honey in saucepan over medium heat. When butter has melted, remove from heat and cool slightly.
  3. Add brown sugar, self raising flour, salt and egg. Stir til well combined.
  4. Place demerera sugar into a smal bowl, Roll 2tsp biscuit nixture into a ball and roll in demerera sugar to coat.
  5. Transfer to prepared trays, allowing 3cm between each biscuit for spreading.
  6. Repeat for remaining mixture.
  7. Bake 15-20 mins or until golden and tops are cracked. Cool on trays for 10mins before trasnferring to wire racks to cool.
  8. Store in an airtight container for up to 4 days.... if they last that long!

Ok, I just made these and...WOW! First of all, the smell ALONE while they're baking is worth it! I used orange blossom honey and they smell and taste almost unbearably good. I'm actually really surprised at how much the actual scent and flavor of the specific honey I used came through in the end result. My 3 yr old says, "Fantastic!" I agree.

Alterations


I had to put the mix into the fridge for about 15-20 minutes to let it set up enough to roll it into balls. Otherwise, PERFECT!
