How to make it

  • Preheat oven to 180degC. Line 2 large baking trays with baking paper.
  • Melt butter and honey in saucepan over medium heat. When butter has melted, remove from heat and cool slightly.
  • Add brown sugar, self raising flour, salt and egg. Stir til well combined.
  • Place demerera sugar into a smal bowl, Roll 2tsp biscuit nixture into a ball and roll in demerera sugar to coat.
  • Transfer to prepared trays, allowing 3cm between each biscuit for spreading.
  • Repeat for remaining mixture.
  • Bake 15-20 mins or until golden and tops are cracked. Cool on trays for 10mins before trasnferring to wire racks to cool.
  • Store in an airtight container for up to 4 days.... if they last that long!

    Ok, I just made these and...WOW! First of all, the smell ALONE while they're baking is worth it! I used orange blossom honey and they smell and taste almost unbearably good. I'm actually really surprised at how much the actual scent and flavor of the specific honey I used came through in the end result. My 3 yr old says, "Fantastic!" I agree.
