How to make it

  • Cook sushi rice.
  • Toast unagi.
  • slice cucumber into long thin strips.
  • cook the omelet and slice it into very thin slice.
  • Roll the sushi inside-out, using cucumber, omelet and uragi as the fillings.
  • Serve with shoyu and wasabi.

    Thank you for sharing your grandmother's sushi recipes. The Unagi roll is beautiful. I will make it as soon as I find unagi here in New Mexico, USA.
