Tarragon Lemon Chicken Pasta Recipe
TARRAGON LEMON CHICKEN PASTA This recipe came from an estate sale. I obtained it when I purchased the family collection from the Paschal Estate in McKinney, Texas in 1992.

Ingredients
  • 8 ounces bow tie pasta
  • 1 pound skinless boneless chicken breast
  • 2 cups broccoli florets
  • 1 teaspoon salt
  • 1 tablespoon flour
  • 1/2 teaspoon dried tarragon
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons fresh lemon juice
  • 2 teaspoons finely shredded lemon peel
  • Oil for stir frying
  • 3/4 cup water

Directions
  1. Prepare raw chicken by cutting into bite size pieces.
  2. In skillet over medium heat place 2 tablespoons oil then add broccoli and salt.
  3. Cook 5 minutes stirring frequently then remove broccoli from pan.
  4. Add additional oil and heat then add chicken pieces and cook 4 minutes.
  5. Remove to bowl with broccoli then stir flour into drippings with tarragon.
  6. Gradually stir in lemon juice and water then cook and stir 3 minutes.
  7. Return chicken and broccoli then cook 3 minutes and toss with cooked pasta.
