Hong Kong Primavera Recipe

Ingredients
  • Vermicelli [8 oz]
  • Green Onions [3]
  • Water [3/4 cup]
  • Peanut Butter, creamy [6 Tbs]
  • Soy Sauce [3 Tbs]
  • Rice Vinegar [6 Tbs]
  • Sugar [3 Tbs]
  • Red Pepper Flakes [1 tsp]
  • Sesame Oil [2 tsp]
  • Carrots, grated [1 cup]
  • Peas [1 cup]
  • Ginger, fresh, minced [1-2 Tbs]
  • Garlic, minced [4 cloves]
  • Napa Cabbage, thinly sliced [1/2 cabbage]

Directions
  1. Cook pasta.
  2. Drain and toss pasta with green onions. Keep warm.
  3. While pasta cooks, combine water, peanut butter, soy sauce, vinegar, and sugar in a blender or food processor until smooth. Add pepper flakes and set aside.
  4. Place oil in a heavy skillet (around 10").
  5. Stir in carrots, peas, ginger, and garlic.
  6. Cook over medium-high heat, stirring constantly, for 30 seconds.
  7. Stir in the cabbage and peanut sauce.
  8. Cook, stirring constantly, for 1 minute or until the cabbage is wilted.
  9. Add to the pasta and toss well. Enjoy!
