Apple Snow

- 6 apples, peeled and sliced (tart, green apples are my favourite for this dish - in NZ 'Granny Smith'.) shopping list
- 2 tablespoons butter shopping list
- 1 tablespoon water shopping list
- 3 eggs separated shopping list
- 1 cup of sugar shopping list
How to make it
- Heat oven to 170 C / 338 F
- Melt butter and water in a saucepan (I often use less butter)
- Add the apples and allow to cook slowly over a low heat until they are soft
- Remove apples from the heat and allow to cool a little
- While apples are cooking beat the egg whites until they reach soft peaks, then slowly add the sugar and beat until the peaks are glossy
- Add the egg yokes to the cooled apple mixture (if the apples are too hot the yokes will cook - not good!) and turn the apple/yoke mixture into an oven proof 'dessert' dish
- Pile the meringue on top and bake in over for 20-30 mins (start checking at 20 mins and take out when the meringue is to your liking)
