Guacamole

- 2 hass avocados, ripe but still firm shopping list
- 1/2 red onion, diced (onions vary so much in size - maybe a half cup or so of diced onion?) shopping list
- 1 serreno chili, finely diced (a jalapeno can be substituted) shopping list
- 2-4 Tbl fresh cilantro, leaves only, chopped (adjust to taste) shopping list
- juice of 1 lime ( a couple of tablespoons at least - adjust this to your taste - many times I just use all the juice from one lime) shopping list
- 1/2 to 1 tsp salt, to taste shopping list
- 1 ripe tomato, cored and seeded, then chopped into 1/4" squares shopping list
How to make it
- Scoop avocados into a bowl
- Add remaining ingredients and mix until well combined, but the guac should still be chunky, not a pureed texture
- Let sit in the fridge for 1-3 hours for flavors to blend. Remove from fridge a half hour before serving to bring up to room temperature.
- Recipe doubles (and probably quadruples) very well.
