Creamy Lemon Shrimp Pasta Recipe
This is very creamy, very lemony and very tasty. Serve along side a nice salad and you have a meal fit for a king or queen. Enjoy

Ingredients
  • 8 ounces fresh pasta shells
  • 1 tablespoon extra virgin olive oil
  • 1 can condensed cream of chicken soup undiluted
  • 1 cup milk
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons dry sherry
  • 2 teaspoons grated lemon rind yellow part only
  • 1/4 teaspoon freshly ground black pepper
  • 1 pound shelled cooked shrimp
  • 1/4 cup shredded fresh parmesan cheese

Directions
  1. Cook shells in large pot of boiling water for 2 minutes then drain thoroughly in colander.
  2. Return to pot and toss with the oil then transfer to square baking dish and preheat broiler.
  3. In medium saucepan combine soup, milk, lemon juice, sherry, rind and pepper then mix well.
  4. Bring to a simmer over medium heat then stir in shrimp and heat through.
  5. Pour mixture over pasta in the dish then sprinkle with parmesan and broil 3 minutes.
