How to make it

  • Preheat oven to 190degC. Line 2 baking trays with baking paper.
  • Beat butter with brown sugar and vanilla in a large bowl with beaters until pale and creamy. Gradually beat in eggs until well combined.
  • Sift flour, hazelnut meal, cocoa and baking powder together.
  • Add to butter mixture and stir til well combined. Add oats and mix well.
  • Drop tablespoonfuls of mixture onto trays leaving room between each for spreading.
  • Bake for 15mins until firm to touch. transfer to a wire rack to cool.

    I have also made these with more oats (maybe another 1 cup or so...) than the recipe, then iced them with chocolate icing. The kids always come back for more....
