Antipasto Pasta Salad Recipe
This beautiful ,hearty salad is ideal for picnics because it is mayo -free. Very easy to make and a big hit.

Ingredients
  • 1 pkg(16 oz) tricolor spiral pasta
  • 1 jar(16oz) giardiniera,drained and cut up
  • 2 cans(one 3.8,one 2-1/4oz)sliced ripe olives
  • 1 jar(5-3/4oz) pimiento-stuffed olives,drained and sliced
  • 1 jar(7oz) roasted sweet peppers,drained and chopped
  • 8oz. summer sausage,cubed
  • 8 oz. pepper jack cheese,cubed
  • 1c Italian dressing

Directions
  1. Cook pasta to directions. Drain and rinse in cold water
  2. In large bowl,combine the giardiniera,olives,red peppers,sausage,cheese and pasta. Add dressing,toss to coat. Cover and refrigerate.
