Malty Mushroom Barley Salad

- 3 cups cooked pearl barley cooked in beef stock shopping list
- 3 tablespoons olive oil shopping list
- 1 tablespoon minced garlic shopping list
- 3 cups mixed organic mushrooms shopping list
- 1/2 cup diced red bell pepper shopping list
- 1/2 cup diced celery shopping list
- 1/4 cup red onion finely diced shopping list
- 1 cup scallion dressing (below) shopping list
- 1/2 cup mild lager shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon freshly ground black pepper shopping list
- scallion Dressing: shopping list
- 6 ounces dark sesame oil shopping list
- 2 cups vegetable oil shopping list
- 1 cup rice wine vinegar shopping list
- 12 ounces porter beer shopping list
- 1/3 cup soy sauce shopping list
- 4 ounces Chinese bead molasses shopping list
- 6 cloves minced garlic shopping list
- 12 scallions sliced thin shopping list
- 1/4 teaspoon Tabasco sauce. shopping list
How to make it
- Over medium high heat in a large skillet add 3 tablespoons olive oil, stir in mushrooms until they wilt. Add garlic and toss until aromatic then deglaze pan with lager. Let mushrooms sweat for 10 minutes then cool to room temperature. Toss bell pepper, onion and celery with the cooked mushrooms then add the dressing and toss well and serve over greens. To make dressing combine all ingredients and mix well.
