My mom has been making this cake since before I was born... which is quite awhile ago. She's made little alterations which have worked out wonderfully. Although she's given this recipe out to people, most still say it doesn't come out the same way.... More

  • 1 box Duncan Hines yellow cake mix
  • 1 box Vanilla instant pudding
  • 1 11 oz can of mandarin oranges
  • 1 16 oz can of crushed pineapple
  • 1 16 oz tub of cool whip
  • Grease
  • Flour

Directions
  1. *cake* Preheat oven 250 degrees and grease cake pan and add flour to coat.
  2. Follow the Duncan Hines cake recipe, however instead of 1 1/4 c of water, use the juice of the mandarin orange can and add the rest in milk to complete the measurement. Follow the rest of the recipe.
  3. After you’re done mixing batter, add the mandarins to your batter and stir with a spatula.
  4. Pour batter into pre-greased & coated cake pan and cook for 1 hour. Let cake cool completely before icing.
  5. *icing* Pour cool whip into large mixing bowl.
  6. Add vanilla pudding a little bit at a time while mixing with a spatula.
  7. Add crushed pineapple with the juice to the icing and mix. Refrigerate icing if cake not ready.
  8. After icing the cake, keep refrigerated or icing will melt.
