Semisweet Chocolate Pistachio Cream Cheese Cookies Recipe

Ingredients
  • 1 cup granulated sugar
  • 1/2 cup butter softened
  • 1-1/2 teaspoons vanilla
  • 1 egg
  • 3 ounces cream cheese softened
  • 3 ounces bittersweet chocolate melted and cooled
  • 2-1/2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 6 ounces vanilla flavored candy coating melted
  • 3/4 cup finely chopped pistachio nuts

Directions
  1. Preheat oven to 375.
  2. Mix sugar, butter, vanilla, egg, cream cheese and chocolate in large bowl until smooth.
  3. Mix flour, baking powder and salt then stir into butter mixture.
  4. Divide dough in half and roll each half 1/8” thick on lightly floured cloth covered surface.
  5. Cut into desired shapes with cookie cutters then place 1” apart on ungreased cookie sheet.
  6. Bake 8 minutes or until dry and set then remove from cookie sheet and cool on wire rack.
  7. Roll edge of cookies about 1/4 inch deep in candy coating then immediately roll in pistachios..
  8. Place on waxed paper and let stand until coating is set.
