Italian Stuffed Bell Peppers Recipe
Easy stuffed peppers that remind you of pizza! I have substitued half of the broth with pizza sauce before, and it's good that way too!

Ingredients
  • 1 lb. Italian Bread cut into ¾ inch cubes
  • 6 Eggs
  • 1 cup water or chicken broth
  • 1 cup choice of ham, prosciutto or capicola
  • 1 cup Salami
  • 1 cup Pepperoni
  • 2 Tblsp. Flat leaf parsley
  • Salt and pepper to taste or Italian seasoning
  • 6-8 Bell Peppers
  • 1 c shredded italian blend cheese

Directions
  1. Cut peppers in ½ vertically and remove stem and seeds
  2. Add water/broth evenly to bread
  3. Combine eggs w/ remaining ingredients
  4. Add egg mixture to bread and mix thoroughly
  5. Scoop stuffing into pepper halves
  6. Top with cheese
  7. Bake at 375 for 15 - 20 minutes.
