Ingredients
  • 1 pound medium pasta shells
  • 1/2 cup sweet unsalted butter
  • 4 ounces flour
  • 1 small onion diced
  • 2 garlic cloves minced
  • 8 ounces american cheese diced
  • 8 ounces pepper jack cheese diced
  • 3 cups heavy cream
  • 1/2 teaspoon salt
  • 1/2 teaspoon wht pepper
  • 1/4 teaspoon nutmeg
  • 1 cup seasoned bread crumbs
  • 1 taespoon hungarian paprika
  • 1/4 cup sugar

Directions
  1. cook pasta and drain
  2. Place pasta in a deep baking dish.
  3. cook butter and onion and garlic until translucent , add flour and wisk in a sandy roux for ten minutes
  4. Take roux off of heat and add cream, wisk in slowly and place back on medium heat until you reach a slow simmer or 180Degrees, add in sugar and seasonings and take off of heat and add cheese
  5. let sit 5 minutes and stir , add mixture to pasta and dust with breadcrumbs and paprika
  6. Cook at 375 degrees until bubbly , let sit ten minuters then serve
