Rolled Brisket Recipe
ROLLED BRISKET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Willingham Estate in Fort Worth, Texas in 1984.

Ingredients
  • 2 pound boned rolled brisket of beef
  • 4 ounces bacon chopped
  • 4 fresh oysters chopped
  • 2 tablespoon chopped parsley
  • 1/2 teaspoon freshly grated nutmeg
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 cup all purpose flour
  • 4 tablespoon butter
  • 2-1/2 cups red wine
  • 2 cups beef stock

Directions
  1. Make slits 1” apart all over the roast.
  2. Insert bacon, oysters and parsley alternately into the slits.
  3. Season roast with nutmeg, salt and pepper then dredge with the flour.
  4. Brown meat in butter then put into large casserole with wine and stock then bring to a boil.
  5. Cover tightly and cook in a preheated oven at 350 for 3 hours.
  6. Remove roast to a dish and keep warm.
  7. Boil cooking liquid to reduce it stirring to mix in sediments in bottom of the casserole.
  8. Pour over the meat and serve immediately.
