Rolled Brisket

- 2 pound boned rolled brisket of beef shopping list
- 4 ounces bacon chopped shopping list
- 4 fresh oysters chopped shopping list
- 2 tablespoon chopped parsley shopping list
- 1/2 teaspoon freshly grated nutmeg shopping list
- 1/4 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/2 cup all purpose flour shopping list
- 4 tablespoon butter shopping list
- 2-1/2 cups red wine shopping list
- 2 cups beef stock shopping list
How to make it
- Make slits 1” apart all over the roast.
- Insert bacon, oysters and parsley alternately into the slits.
- Season roast with nutmeg, salt and pepper then dredge with the flour.
- Brown meat in butter then put into large casserole with wine and stock then bring to a boil.
- Cover tightly and cook in a preheated oven at 350 for 3 hours.
- Remove roast to a dish and keep warm.
- Boil cooking liquid to reduce it stirring to mix in sediments in bottom of the casserole.
- Pour over the meat and serve immediately.
