How to make it

  • Make slits 1” apart all over the roast.
  • Insert bacon, oysters and parsley alternately into the slits.
  • Season roast with nutmeg, salt and pepper then dredge with the flour.
  • Brown meat in butter then put into large casserole with wine and stock then bring to a boil.
  • Cover tightly and cook in a preheated oven at 350 for 3 hours.
  • Remove roast to a dish and keep warm.
  • Boil cooking liquid to reduce it stirring to mix in sediments in bottom of the casserole.
  • Pour over the meat and serve immediately.
