Ingredients
  • 1 cup couscous
  • 1/2 cup dried cherries
  • 1 cup boiling water
  • 5 tbs olive oil divided
  • 1 large orange bell pepper cut into bite size piece
  • 1 large onion halved and then sliced thin
  • 1 1/2 tsp ground cumin
  • 1/2 tsp ground ginger
  • 1/4 tsp cinnamon
  • salt and pepper
  • 1, 16 oz can chickpeas drained
  • 1/4 cup fresh chopped cilantro
  • 3 Tbs rice wine vinegar
  • 3 Tbs frozen ojrange concentrate thawed

Directions
  1. Place couscous and cherries in a bowl.
  2. Cover with boiling water,
  3. Cover bowl with plastic wrap.
  4. let sit 5 minutes or water completely absorbed.
  5. Meanwhile heat 2 Tbs oil in skillet and saute peppers and onions crisp tender.
  6. Add seasoning and spices as they cook.
  7. Add to couscous along with remaining 3 tbs of oil, vinegar and o.j.
  8. Toss to coat
  9. Cover and chill tell serving time
