Moroccan Couscous salad

- 1 cup couscous shopping list
- 1/2 cup dried cherries shopping list
- 1 cup boiling water shopping list
- 5 tbs olive oil divided shopping list
- 1 large orange bell pepper cut into bite size piece shopping list
- 1 large onion halved and then sliced thin shopping list
- 1 1/2 tsp ground cumin shopping list
- 1/2 tsp ground ginger shopping list
- 1/4 tsp cinnamon shopping list
- salt and pepper shopping list
- 1, 16 oz can chickpeas drained shopping list
- 1/4 cup fresh chopped cilantro shopping list
- 3 Tbs rice wine vinegar shopping list
- 3 Tbs frozen ojrange concentrate thawed shopping list
How to make it
- Place couscous and cherries in a bowl.
- Cover with boiling water,
- Cover bowl with plastic wrap.
- let sit 5 minutes or water completely absorbed.
- Meanwhile heat 2 Tbs oil in skillet and saute peppers and onions crisp tender.
- Add seasoning and spices as they cook.
- Add to couscous along with remaining 3 tbs of oil, vinegar and o.j.
- Toss to coat
- Cover and chill tell serving time
