Ingredients
  • 12 peaches
  • 1 &1/2 cups coconut water
  • 4 cloves
  • 1 teaspoon fresh ginger julienned
  • 2/3 cup raw honey
  • 1 stick of cinnamon broken into fragments
  • 1 & 1/2 cups dry white wine

Directions
  1. whisk the coconut water together with the honey. now add the cinnamon fragments, ginger julienne, cloves and wine. refrigerate overnight or for a few hours.
  2. clean ten peaches and reserve two of them for garnishing the top of the soup. slice and place in the food processor.
  3. strain the liquid mixture.
  4. add this peach puree to the liquid mixture and refrigerate until ready to serve.
  5. before serving, clean and slice the remaining two peaches and decorate the soup.
  6. if you have a leftover coconut you won't do anything else with you may garnish the soup with shredded fresh coconut as well.
