Sweet Potato Pecan Pie

A luscious combination of two Southern favorites. The perfect Thanksgiving pie. Sweet potatoes and pecans make such a wonderful combination. This recipe comes from The Colony House in Charleston, SC.
Ingredients
- 1 cup cooked, mashed sweet potato shopping list
- 1/4 cup light brown sugar shopping list
- 1 egg, slightly beaten shopping list
- 1 T. heavy cream shopping list
- 1 T. butter shopping list
- 1 T. vanilla shopping list
- 1/4 t. salt shopping list
- 1 t. cinnamon shopping list
- 1/4 t. nutmeg shopping list
- 1 8 or 9 inch prebaked pie shell shopping list
- 3/4 cup sugar shopping list
- 3/4 cup dark corn syrup shopping list
- 2 eggs, slightly beaten shopping list
- 1 1/2 T. melted butter shopping list
- 2 t. vanilla shopping list
- pinch of salt shopping list
- 1/2 t. cinnamon shopping list
- 1 cup pecans, broken shopping list
How to make it
- Combine first 9 ingredients and mix until well incorporated. Pour into pieshell.
- Combine all remaining ingredients and pour over filling in pie shell.
- Bake in a preheated 350 degree oven for about 40 minutes or until filling is set.
