Veal With Pineapple Lime Sauce And Pecans Recipe

Ingredients
  • 1 pound veal scaloppini
  • 2 teaspoons vegetable oil
  • 3 tablespoons flour
  • 1/4 cup chopped green onions
  • 2 tablespoons chopped pecans
  • 1/4 cup pineapple juice concentrate
  • 1/4 cup water
  • 1 tablespoon honey
  • 1 tablespoon fresh lime juice
  • 1 teaspoon grated lime zest

Directions
  1. Flatten veal to 1/4" thickness between two sheets of waxed paper.
  2. In large nonstick skillet sprayed with vegetable spray heat oil over medium high heat.
  3. Dredge veal in flour and cook 3 minutes per side or until just done at center.
  4. Place on a serving dish and cover then add green onions and pecans to skillet.
  5. Cook for 2 minutes then add pineapple juice concentrate, water, honey, lime juice and lime zest.
  6. Bring to a boil for 1 minute or until slightly syrupy and thickened then serve sauce over veal.
