Ingredients
  • 1 pound cooked pasta, al dente
  • 1 red bell pepper, diced
  • 2 t. olive oil
  • 1 box frozen spinach, drained and chopped
  • 1 1/2 cups half and half
  • 2 cups commercial marinara sauce
  • 2 ounces white wine
  • 3 oz freshly grated parmesan cheese
  • 2 medium tomatoes, diced
  • salt and pepper to taste

Directions
  1. Saute bell pepper in oil until tender.
  2. Add spinach, half and half, marinara sauce and wine.
  3. When mixture is hot, add cheese and tomatoes.
  4. Season with salt and pepper and stir until well blended.
  5. Pour over warm pasta, toss gently, and serve family-style.
  6. *especially excellent with the addition of grilled chicken breast, as pictured.
