Roasted Eggplant with Sun-dried tomato and Pistachios

- 2 eggplants, sliced shopping list
- 6 T olive oil shopping list
- 1/2 c. sun-dried tomatoes, chopped shopping list
- 1/4 c. chopped green olives shopping list
- 1/4 c. chopped pistachio nuts shopping list
- 1/4 c. finely shredded basil shopping list
- 2/3 c. grated Parmesan shopping list
How to make it
- Roast eggplant in layers soaked in olive oil in oven at 375F until well roasted and tender.
- Combine remaining ingredients.
- Spoon evenly over eggplant and bake at 350F for 10 minutes.
