Roasted Eggplant with Sun-dried tomato and Pistachios Recipe

How to make it

  • Roast eggplant in layers soaked in olive oil in oven at 375F until well roasted and tender.
  • Combine remaining ingredients.
  • Spoon evenly over eggplant and bake at 350F for 10 minutes.
