Ingredients
  • 2 cups of chicken stock
  • 1 green onion, roughly diced
  • 1/2 small Onion, roughly diced
  • 1 Clove garlic, quartered
  • 5-10 Sprigs parsley, stems only
  • 1 sm Sprig thyme
  • 1/2 Bay leaf- or 1 small one
  • 5-10 White peppercorns, crushed
  • 3 Coriander seeds - or 3 shakes of ground coriander seed

Directions
  1. Put everything in a pot.
  2. Bring to a boil.
  3. Turn down heat and let simmer for 10 minutes.
  4. Poach fish in liquid.- I used cod.
  5. Strain liquid in a fine sieve.
  6. Liquid may be re-used to make rice as an accompaniment for fish.
