Totally Low Fat Italian Tuna Salad

Quick, low fat, low calorie lunch salad.
Ingredients
- 1 can 5 oz chunk light tuna, drained shopping list
- 1 TBSP (+/-) balsamic vinegar shopping list
- 1 tsp fresh lemon juice shopping list
- 1 tsp lemon zest shopping list
- 1 TBSP capers shopping list
- salt & pepper to taste shopping list
- 1 cup lettuce, shredded into smaller pieces shopping list
- 1/2 medium tomato, cut in half and sliced shopping list
- 1/2 medium cucumber, peeled and sliced and re-sliced into halve shopping list
How to make it
- Mix tuna and next five ingredients.
- Spoon tuna salad over lettuce, tomato and cucumbers.
- Lightly toss all ingredients and serve.
