Fruit Leather

- Any fresh,ripe fruit,washed,peeled,pitted,chopped. shopping list
- I'm partial to a combination of kiwi,pineapple,strawberry,apple(for pectin) shopping list
- water(or)fruit juice. shopping list
- Fresh lemon juice shopping list
- Sugar shopping list
- spices shopping list
How to make it
- In a saucepan,add your fruit and water.
- If using 4 cups of chopped fruit,then add 1/2 cup water or fruit juice.
- Cover and simmer mixture for about 20 minutes or until cooked.
- Uncover,stir and mash with potato masher.
- If your cooking 4 cups of fruit,then add sugar,1 Tablespoon at a time,depending on how sweet the fruit is before,will depend on how much sugar you will add.
- Add the lemon juice 1 teaspoon at a time to spark the flavor of the fruit.
- May add a pinch or two of spices(I don't ,unless I am making all apple or peach,then I add pie spice.)
- Contiue to cook until the sugar is dissolved and fruit is thickened ,about 15 to 20 minutes,on simmer.
- Place fruit puree in blender and blend until smooth,adust it to your taste with more sugar,lemon juice or spices.
- Line a jelly roll pan with heavy duty plastic wrap.
- Pour fruit puree into pan to a thickness of about 1/8 "to 1/4".
- Place in a 140 degree oven ,for about 8 to 12 hours,or until the fruit is dried out,no longer sticky,and smooth on the surface.
- Peel up, roll up, in it's plastic wrap, and store in an airtight container in the refrigerator.
