Ingredients
  • 4lbs hot, long red, green, or yellow peppers
  • 3lbs sweet red and green peppers, mixed
  • 5 cups vinegar (5%)
  • 1 cup water
  • 4tsp canning or pickling salt
  • 2 tbsp sugar
  • 2 cloves garlic

Directions
  1. Wash and peel peppers. If small peppers are left whole slash 2-4 slits in each. Quarter large peppers. Flatten small peppers.
  2. Fill jars with raw peppers, leaving 1/2 inch head space.
  3. Combine and heat all other ingredients in boiling water and simmer 10 minutes. Remove garlic.
  4. Add pickling solution over peppers, leaving 1/2 inch head space.
  5. Adjust lids and process jars. Boiling water bath 10 minutes for under 1000 feet and 15 minutes for 1000-3000 feet.
