Hot Pepper Jelly Recipe
This is good on vegetables or cooked meats and cracker and toast.

Ingredients
  • 3/4 cup ground cayanne pepper
  • 1/4 cup jalapeno pepper
  • 6 cups suger
  • 1 1/2 cup vinger
  • 2 (3 oz.) pkg. liquid pectin

Directions
  1. use a blender to grind up the peppers but not at the same time because you will need to measure afterward.
  2. Combine peppers, sugars and vinger in large saucepan.
  3. Place over high heat and stir until mixture comes to a hard boil
  4. Boil hard for 1 minute, stirring constantly.
  5. Remove from heat; stir in pectin
  6. Let sit for 5 minutes.
  7. Skim off foam with a metal spoon, and pour quickly into hot sterilized jelly glasses,leaving 1/2 inch headspace.
  8. Seal at once with 1/8 inch layer of hot paraffin or metal lids.
