Easy Creamy Spicy Enchiladas

Ingredients
  • 2 lbs. shrimp, peeled and deveined
  • 1 cup chopped green onions
  • 3 tsp. Tony Cachere’s seasoning
  • 2 tbsp. butter
  • 1 can cream of shrimp soup
  • 1 can cream of mushroom soup
  • 1 pkg. cream cheese w/chives
  • Flour tortillas
  • Cheddar Cheese
  • Monterey Jack w/peppers cheese
  • 1 jar of pimentos

Directions
  1. Preheat oven to 350 degrees.
  2. Season shrimp in a bag with Tony Cachere’s Creole seasoning (salt-free). Let chill 4 hours if possible. Saute shrimp with butter and onions in a sauce pan until shrimp turns pink, about 5 minutes. Add soups and cream cheese and simmer on low til creamy, about 10-15 minutes, stirring occasionally. Spoon mixture into flour tortillas, roll-up tortillas and place in a pyrex baking dish. Spoon remaining mixture on top. Sprinkle cheeses on top. Bake at 350 degrees for 30 minutes.
  3. Substitute chicken for shrimp and cream of chicken soup for cream of shrimp soup if desired.
