Shrimp or Chicken Enchiladas

- 2 lbs. shrimp, peeled and deveined shopping list
- 1 cup chopped green onions shopping list
- 3 tsp. Tony Cachere’s seasoning shopping list
- 2 tbsp. butter shopping list
- 1 can cream of shrimp soup shopping list
- 1 can cream of mushroom soup shopping list
- 1 pkg. cream cheese w/chives shopping list
- flour tortillas shopping list
- cheddar cheese shopping list
- Monterey Jack w/peppers cheese shopping list
- 1 jar of pimentos shopping list
How to make it
- Preheat oven to 350 degrees.
- Season shrimp in a bag with Tony Cachere’s Creole seasoning (salt-free). Let chill 4 hours if possible. Saute shrimp with butter and onions in a sauce pan until shrimp turns pink, about 5 minutes. Add soups and cream cheese and simmer on low til creamy, about 10-15 minutes, stirring occasionally. Spoon mixture into flour tortillas, roll-up tortillas and place in a pyrex baking dish. Spoon remaining mixture on top. Sprinkle cheeses on top. Bake at 350 degrees for 30 minutes.
- Substitute chicken for shrimp and cream of chicken soup for cream of shrimp soup if desired.
