Polenta Pizza

- polenta 300 - 400 gms shopping list
- tomatoes 4-6 sliced shopping list
- red capsicum (bell pepper) finely chopped shopping list
- green capsicum (bell pepper) finely chopped shopping list
- 1 tsp marjoram shopping list
- 3 tbsp chopped fresh basil shopping list
- 3 tbsp chopped pitted black olives shopping list
- 200 g hard yellow cheese (lke cheddar) grated shopping list
- 100 g feta shopping list
How to make it
- Cook polenta according to directions on packet
- Pour into large glass baking dish 22 cm x 35 cm
- Layer the sliced tomatoes on top of the polenta
- Sprinkle the marjoram and basil over the tomatoes
- Season tomatoes with salt and pepper
- Spread over both lots of chopped capsicum
- Spread over chopped pitted black olives
- Sprinkle over grated yellow cheese
- Crumble over the feta
- Bake in oven for 45 - 55 minutes
