How to make it

  • Cook polenta according to directions on packet
  • Pour into large glass baking dish 22 cm x 35 cm
  • Layer the sliced tomatoes on top of the polenta
  • Sprinkle the marjoram and basil over the tomatoes
  • Season tomatoes with salt and pepper
  • Spread over both lots of chopped capsicum
  • Spread over chopped pitted black olives
  • Sprinkle over grated yellow cheese
  • Crumble over the feta
  • Bake in oven for 45 - 55 minutes
