Whole Wheat Spinach Stuffed Lasagna Rolls Recipe
I love this dish! It proves that healthy can be tasty too. This dish can be prepared ahead of time and heated in the oven when ready to serve.

Ingredients
  • 1c. Ricotta Cheese
  • 1-1 1/2 c. marinara
  • 1/2 c. part skim mozzarella cheese
  • 1/2 t. dried basil, crushed
  • 1/8 t. crushed red pepper flakes
  • 10 oz. frozen chopped spinach, thawed & squeezed dry
  • 2 T. grated Parmesan cheese
  • 4 whole wheat lasagna noodles, cooked al dente

Directions
  1. Combine spinach with ricotta, basil and red pepper flakes.
  2. Place drained cooked noodles on a piece of wax paper or baking sheet.
  3. Spread spinach mixture over each noodle leaving about 1/4" at one end.
  4. Roll each noodle to make a spinach roll.
  5. Spray 11x7" baking dish with non-stick spray.
  6. Spread a few spoonfuls of marinara over bottom of dish.
  7. Place pasta rolls seam-side down in baking dish leaving about 1/2" between rolls.
  8. Top with more marinara.
  9. Sprinkle with Mozzarella and Parmesan.
  10. Bake for 25 min. @ 350F or until heated through.
