How to make it

  • preheat oven to 180 degrees Celsius
  • grease a large loaf pan with margarine or butter and set aside
  • mix all the dry ingredients together
  • beat the eggs and oil together
  • form a well in the dry ingredients
  • pour the egg and oil mixture and mix
  • add the banana and carrot and mix
  • the mixture should be smooth but not too soft or dry
  • pour in the prepared tin and bake at 180 degrees Celsius for about 40 minutes or until a small fork comes out dry when inserted in the cake.
  • cool in baking tin for about 5 minutes and turn over
  • enjoy warm with butter or plain
