Sherry Sweet Potatoes With Pecans

- 6 sweet potatoes shopping list
- 1/2 cup honey shopping list
- 1 cup orange juice shopping list
- 1 tablespoon grated orange peel shopping list
- 1/3 cup sherry shopping list
- 1 cup pecans coarsely chopped shopping list
- 2 tablespoons butter shopping list
How to make it
- Boil sweet potatoes in salted water until tender then peel and cut into thick slices.
- Preheat oven to 350 then combine honey, orange juice, orange rind and sherry.
- Place a layer of sweet potatoes in a baking dish then cover it with some of the honey mixture.
- Sprinkle with pecans and repeat layers of potatoes, liquid and pecans until the casserole is filled.
- Pour remaining juice over top then sprinkle with nuts and dot with butter.
- Cover and bake 30 minutes or until juice has been absorbed by potatoes and top is browned.
