Sherry Sweet Potatoes With Pecans Recipe
SHERRY SWEET POTATOES WITH PECANS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Butler Estate in Wills Point, Texas in 1993.

Ingredients
  • 6 sweet potatoes
  • 1/2 cup honey
  • 1 cup orange juice
  • 1 tablespoon grated orange peel
  • 1/3 cup sherry
  • 1 cup pecans coarsely chopped
  • 2 tablespoons butter

Directions
  1. Boil sweet potatoes in salted water until tender then peel and cut into thick slices.
  2. Preheat oven to 350 then combine honey, orange juice, orange rind and sherry.
  3. Place a layer of sweet potatoes in a baking dish then cover it with some of the honey mixture.
  4. Sprinkle with pecans and repeat layers of potatoes, liquid and pecans until the casserole is filled.
  5. Pour remaining juice over top then sprinkle with nuts and dot with butter.
  6. Cover and bake 30 minutes or until juice has been absorbed by potatoes and top is browned.
