How to make it

  • Boil sweet potatoes in salted water until tender then peel and cut into thick slices.
  • Preheat oven to 350 then combine honey, orange juice, orange rind and sherry.
  • Place a layer of sweet potatoes in a baking dish then cover it with some of the honey mixture.
  • Sprinkle with pecans and repeat layers of potatoes, liquid and pecans until the casserole is filled.
  • Pour remaining juice over top then sprinkle with nuts and dot with butter.
  • Cover and bake 30 minutes or until juice has been absorbed by potatoes and top is browned.
