Ingredients

1-1/2 lbs. sweet potatoes,chopped

1 bunch scallions, cut in 2"pieces

6 cloves garlic,crushed

1 Tbs fresh thyme

1/4 c olive oil

salt and pepper

Directions

Combine potatoes,scallions,garlic and thyme in a bowl. Drizzle with olive oil,season with salt and pepper and toss. Place on sheet of foil and fold up. Grill over low heat until the potatoes are tender,20 to 25 mins.
