Scallion Sweet Potatoes

Easy and delicious grilled sweet potatoes.
Ingredients
- 1-1/2 lbs. sweet potatoes,chopped shopping list
- 1 bunch scallions, cut in 2"pieces shopping list
- 6 cloves garlic,crushed shopping list
- 1 Tbs fresh thyme shopping list
- 1/4 c olive oil shopping list
- salt and pepper shopping list
How to make it
- Combine potatoes,scallions,garlic and thyme in a bowl. Drizzle with olive oil,season with salt and pepper and toss. Place on sheet of foil and fold up. Grill over low heat until the potatoes are tender,20 to 25 mins.
