Peach Blueberry Skillet Crisp

- 4 Tbs butter shopping list
- 8 oatmeal-raisin cookies,chopped (1c) shopping list
- 1/4 c chopped pecan pieces shopping list
- 1-1/2 lbs. peaches,pitted,sliced (4 cups) shopping list
- 3/4 c white cranberry and peach juice drink,such as Ocean Spray shopping list
- 1/3 c granulated sugar shopping list
- 2 Tbs cornstarch shopping list
- 2 pkgs. (6oz. ea) shopping list
- blueberries shopping list
- 2 Tbs confectioners sugar shopping list
- whipped cream,optional shopping list
How to make it
- In 10" nonstick skillet,melt 3 Tbs butter over med. heat. Add cookies and pecans;cook till toasted,2-3 mins. Remove from skillet,reserve.
- In same skillet,melt remaining 1 Tbs butter over med. heat. Add peaches;cook 2-3 mins. Stir in juice and granulated sugar. Cover, reduce heat to med-low and cook till peaches are almost tender,10-12 mins.
- Meanwhile stir together cornstarch and 2 Tbs water till smooth. Stir blueberriwes and cornstarch mixture into peach mixture. Cover,cook till fruit is softened and juices are thickened,10-12 mins. Remove from heat,sprinkle with reserved cookie mixture. Let stand 15 mins. Sprinkle with confectioners sugar. If desired,serve with whipped cream.
