Mulligatawny Soup Recipe
This is very flavorful, with a unique taste. Great as a lunch meal with fresh bread.

Ingredients
  • 1 large yellow onion sliced
  • 1/2 cup of sliced carrots
  • 1/2 cup of sliced celery
  • 1 green pepper chopped
  • 1/4 cup of butter
  • 1/4 cup of flour
  • 1 tsp. of curry powder
  • 4 whole cloves
  • 2 TBS. chopped fresh parsley
  • 1 cup of diced cooked chicken
  • 1 can(16oz.) tomatoes with the juice
  • 1 qt. of chicken stock
  • Salt and Pepper

Directions
  1. Saute onion, carrots, celery and green pepper in butter.
  2. Blend in the flour and cook several minutes.
  3. Add remaining ingredients.
  4. Simmer for 60 minutes.
  5. Remove the cloves before serving

Wonderful recipe - I was raised on this soup. My Dad was raised in Burma from the time he was 2 until 11. He used to make this for us all the time. Never had a recipe - so now I do. Thanks!
