Seasoned Mashed Black Beans Recipe
SEASONED MASHED BLACK BEANS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Woodson Estate in Bedford, Texas in 1990.

Ingredients
  • 2 medium white onions chopped
  • 4 cloves garlic minced
  • 2 small jalapeno chilies minced
  • 30 ounces canned black beans rinsed and drained
  • 2 cups vegetable broth
  • 1 teaspoon dried cumin
  • 1/3 cup finely chopped cilantro leaves
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper

Directions
  1. Spray medium skillet with cooking spray then heat over medium heat until hot.
  2. Sauté onions, garlic and jalapeno until tender then add beans and broth to skillet.
  3. Cook over medium heat coarsely mashing beans with fork then stir in cumin and cilantro.
  4. Season with salt and pepper then serve immediately.
