How to make it

  • Preheat oven to 375 then grease casserole dish.
  • Cook whipping cream, leeks, thyme, salt, pepper and nutmeg in heavy saucepan over low heat.
  • Stir occasionally until mixture begins to simmer then stir in yams and parsnips.
  • Cover and simmer 10 minutes or until vegetables are slightly tender.
  • Layer half vegetable mixture and half of the cheese in casserole then top with apple.
  • Repeat layers of vegetables and cheese then bake uncovered 45 minutes.
  • Let stand 10 minutes before serving.
