Ingredients

How to make it

  • First you want to add some olive oil to a large pan over medium heat.
  • Saute the mushrooms and leaks until soft.
  • Now add in the sherr and let reduce by 1/2.
  • Next you want to add in the beef broth, water and pepper.
  • Let this come to a boil, then add the pasta.
  • You will want to let this boil for approx. 10 min. letting the pasta get tender.
  • Ladle up and serve!

    I'd like to try it, too, with chicken stock instead. But I was wondering about the margerine in the recipe...not very fond of that stuff, so I'm using more olive oil. I'll let you know what.

    Wonderful recipe: it was easy to follow and prepare with ingredients I had in my kitchen. The flavour of the leeks was subtle and delicious; the mushrooms and orzo added pleasing textures. I substitued chicken broth for beef, with good results. Many thanks!
