Ingredients
  • 4 oz. of sliced fresh mushrooms
  • 1 c. of sliced leeks
  • 1/2 c. of dry sherry
  • 3 (10.5 oz.) cans of condensed beef broth
  • 3 3/4 c. of water
  • 1/2 tsp. of ground black pepper
  • 1/2 c. of uncooked orzo pasta
  • 2 tbsp. of margarine
  • 2 tbsp. of olive oil
  • 1/2 c. of dry sherry

Directions
  1. First you want to add some olive oil to a large pan over medium heat.
  2. Saute the mushrooms and leaks until soft.
  3. Now add in the sherr and let reduce by 1/2.
  4. Next you want to add in the beef broth, water and pepper.
  5. Let this come to a boil, then add the pasta.
  6. You will want to let this boil for approx. 10 min. letting the pasta get tender.
  7. Ladle up and serve!

Thanks for the recipe- it's got all my fave ingredients so i will have to try it!


Wonderful recipe: it was easy to follow and prepare with ingredients I had in my kitchen. The flavour of the leeks was subtle and delicious; the mushrooms and orzo added pleasing textures. I substitued chicken broth for beef, with good results. Many thanks!


I'd like to try it, too, with chicken stock instead. But I was wondering about the margerine in the recipe...not very fond of that stuff, so I'm using more olive oil. I'll let you know what.
