How to make it

  • Preheat oven for 350 degrees.
  • Grease an 8” square baking dish, and then combine the blueberries, lemon juice and one teaspoon of the sugar in the prepared dish. Stir. (Note: Do not grease pan with butter if concerned with being dairy-free!)
  • In a mixing bowl, combine the flour, ½ cup of sugar, salt, baking powder, nutmeg and 1/8 teaspoon of cinnamon.
  • In a small bowl whisk together the oil, vanilla and egg whites. Add to the flour mixture to moisten.
  • Drop spoonfuls of the dough on top of the berry mixture.
  • Mix together 3 tablespoons of the sugar, and ½ teaspoons of the cinnamon - sprinkle over the dough.
  • Bake for 35-40 minutes or until berries are bubbling hot and the batter is lightly browned.
  • Serve hot.

    Delicious and simple recipe--my boyfriend loved this. I used Red Mills all purpose gluten-free flour and substituted the nutmeg with just cinnamon and it turned out perfectly! This recipe is great because you can hardly notice it is gluten free. Also great a la mode with vanilla ice cream :)
