Gluten Free Maine Blueberry Cobbler Recipe
I have not made this recipe yet.. but it sounds good... I will use the Wendy Warks GF flour mix... recipe at the bottom of my recipes... or use your favorite mix... the recipe is from Be Free For Me

Ingredients
  • 4 ½ cups of fresh blueberries – washed, dried and de-stemmed
  • 1 ½ teaspoon lemon juice
  • 1 teaspoon (for berries), ½ cup (for batter), plus 3 tablespoons (for sprinkling) of sugar
  • 1 cup gluten-free all purpose flour (Check label for allergens)
  • 1/8 teaspoon salt
  • 1 teaspoon baking powder
  • 1/8 teaspoon nutmeg
  • 1/8 teaspoon (for batter), plus ½ teaspoon (for sprinkling) of ground cinnamon
  • 1 tablespoon vegetable oil
  • 1 teaspoon vanilla extract
  • 2 egg whites, beaten lightly

Directions
  1. Preheat oven for 350 degrees.
  2. Grease an 8” square baking dish, and then combine the blueberries, lemon juice and one teaspoon of the sugar in the prepared dish. Stir. (Note: Do not grease pan with butter if concerned with being dairy-free!)
  3. In a mixing bowl, combine the flour, ½ cup of sugar, salt, baking powder, nutmeg and 1/8 teaspoon of cinnamon.
  4. In a small bowl whisk together the oil, vanilla and egg whites. Add to the flour mixture to moisten.
  5. Drop spoonfuls of the dough on top of the berry mixture.
  6. Mix together 3 tablespoons of the sugar, and ½ teaspoons of the cinnamon - sprinkle over the dough.
  7. Bake for 35-40 minutes or until berries are bubbling hot and the batter is lightly browned.
  8. Serve hot.
