Zesty Snapper Fillets Recipe
ZESTY SNAPPER FILLETS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Pittman Estate in Hurst, Texas in 1993.

Ingredients
  • 8 ounces whole tomatoes drained and chopped
  • 2 tablespoons finely chopped white onion
  • 1 tablespoon finely chopped fresh ginger
  • 1 clove garlic finely chopped
  • 1 teaspoon finely chopped jalapeno
  • 1 teaspoon salt
  • 4 red snapper fillets

Directions
  1. Preheat oven to 400 then tear off 4 large sheets of aluminum foil.
  2. Combine tomatoes, onion, ginger, garlic, jalapeno and 1/2 teaspoon salt then set aside.
  3. Sprinkle fillets with remaining salt then place 1 fillet on each piece of foil.
  4. Top each fillet with 2 tablespoons salsa then seal packets tightly folding edges over twice.
  5. Heat a large baking sheet in heated oven about 2 minutes.
  6. Place packets on heated baking sheet then bake 8 minutes or until fish is cooked through.
