Zesty Snapper Fillets

- 8 ounces whole tomatoes drained and chopped shopping list
- 2 tablespoons finely chopped white onion shopping list
- 1 tablespoon finely chopped fresh ginger shopping list
- 1 clove garlic finely chopped shopping list
- 1 teaspoon finely chopped jalapeno shopping list
- 1 teaspoon salt shopping list
- 4 red snapper fillets shopping list
How to make it
- Preheat oven to 400 then tear off 4 large sheets of aluminum foil.
- Combine tomatoes, onion, ginger, garlic, jalapeno and 1/2 teaspoon salt then set aside.
- Sprinkle fillets with remaining salt then place 1 fillet on each piece of foil.
- Top each fillet with 2 tablespoons salsa then seal packets tightly folding edges over twice.
- Heat a large baking sheet in heated oven about 2 minutes.
- Place packets on heated baking sheet then bake 8 minutes or until fish is cooked through.
