White Bean Dip Recipe
This is a great dip with veggies, toasted pita tips, crackers, spread on toast or a topper for burgers. It's your choice. This recipe can be easily doubled and it's well worth it.

Ingredients
  • 1 can (19 oz.) white kidney beans, drained and rinsed under cold water
  • Note: If you're using dried beans, you will need 2 cups of beans that have been soaked, drained and rinsed then boiled until soft.
  • 1-1/2 Tbsp. olive oil
  • 1-1/2 Tbsp. lemon juice
  • 1-2 garlic cloves, chopped
  • 1/2 tsp. dried oregano
  • 1 tsp. salt
  • 1/4 tsp. white pepper
  • 1 squirt of your favorite hot sauce (optional)
  • Note: If you want, a little tahini (sesame seed paste) can be added making it similar to hummus.

Directions
  1. Place all ingredients in a food processor.
  2. Blend until very smooth.
  3. Garnish with chopped fresh parsley, cilantro, chives or spring onion.
