Zanzibar Kebabs With Swahili-style Tomato Salad

- KEBABS: shopping list
- 1kg minced beef (you can also add minced lamb; no pork) shopping list
- 1 medium onion and 2 cloves of garlic, finely chopped shopping list
- 1 tablespoon fresh grated ginger shopping list
- 1 heaped tablespoon garam masala (Indian spice blend) shopping list
- salt, pepper shopping list
- cayenne pepper (optional) shopping list
- 1 egg shopping list
- plain breadcrumbs (as required) shopping list
- coarse maize flour (polenta) shopping list
- lemon slices shopping list
- groundnut oil for frying shopping list
- coriander leaves to garnish shopping list
- tomato SALAD shopping list
- firm tomatoes, very thinly sliced shopping list
- onion, very thinly sliced shopping list
- chopped green chillies (optional) shopping list
- salt shopping list
- lemon juice shopping list
How to make it
- In a large bowl, mix all ingredients
- add breadcrumbs until you have a meat dough, which doesn't break or crumble (best to work the meat with your hands)
- keep in a cool place for half an hour to allow all the flavours to blend
- form patties, sausages or balls (or a mixture, which makes for a more interesting presentation)
- Coat patties with polenta flour
- pan-fry patties until well done
- use paper towels to absorb excess fat
- allow to cool
- arrange on a serving platter, garnish with coriander leaves and lemon slices
- For the salad, toss tomato and onion slices, sprinkle with salt and lemon juice, add chopped green chillies for the extra kick; this salad does not require oil
- Serve with chapati or Lebanese bread (fresh baguette will also do nicely)
