How to make it

  • In a large bowl, mix all ingredients
  • add breadcrumbs until you have a meat dough, which doesn't break or crumble (best to work the meat with your hands)
  • keep in a cool place for half an hour to allow all the flavours to blend
  • form patties, sausages or balls (or a mixture, which makes for a more interesting presentation)
  • Coat patties with polenta flour
  • pan-fry patties until well done
  • use paper towels to absorb excess fat
  • allow to cool
  • arrange on a serving platter, garnish with coriander leaves and lemon slices
  • For the salad, toss tomato and onion slices, sprinkle with salt and lemon juice, add chopped green chillies for the extra kick; this salad does not require oil
  • Serve with chapati or Lebanese bread (fresh baguette will also do nicely)
