Peanut Butter Pound Cake Recipe
PEANUT BUTTER POUND CAKE This recipe came from an estate sale. I obtained it when I purchased the family collection from the Smitty Estate in Arlington, Texas in 1995.

Ingredients
  • 1-1/4 cup butter softened
  • 2 cups granulated sugar
  • 6 eggs
  • 1 teaspoon vanilla
  • 1/2 cup creamy peanut butter
  • 2 cups flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/3 cup finely chopped peanuts

Directions
  1. Cream butter and sugar until light and fluffy then beat in eggs one at a time.
  2. Beat well after each addition then add vanilla and beat in peanut butter slowly.
  3. Sift flour with baking powder and salt then stir into butter mixture a little at a time until blended.
  4. Line a tube pan with waxed paper then pour batter in and bake 45 minutes at 350.
  5. Reduce heat to 325 and sprinkle cake with chopped peanuts then bake 20 minutes longer.
  6. Cool in pan on rack for 10 minutes then remove cake to rack and cool completely.
