Eggplant Saltimbocca

- A) 6 garlic cloves shopping list
- 3 tsp ground sage shopping list
- 1 tsp salt shopping list
- 1 tbl olive oil shopping list
- B) 1 eggplant pealed, sliced 1/4" shopping list
- 3 large eggs beaten shopping list
- 1 cup seasoned bread crumbs shopping list
- 1/3 cup olive oil shopping list
- C) sliced prosciutto ham shopping list
- sliced mozzarella cheese shopping list
- sliced provolone cheese shopping list
- D) sliced mushrooms shopping list
- 1/2 cup Sherry shopping list
- marinara sauce (optional) shopping list
How to make it
- Combine ingredients in A) and make a paste
- rub paste into slices of eggplant
- B)dip in egg batter then into bread crumbs
- heat 1/3 cup olive oil in large skillet and add eggplant
- cook approx 2 1/2 minutes each side over medium heat.
- set aside on paper towels
- iC) in a large oven pan, arrange half the eggplant slices in the bottom of pan
- add a layer of sliced mozzarella cheese
- then add a layer of sliced prosciutto
- then add a layer of sliced provolone cheese
- then put the other half of the eggplant slice on top
- D) top with sliced mushrooms
- pour sherry over top and place in preheated 350 degree oven
- bake 30 minutes
- Serve hot topped with warm marinara sauce (optional
