How to make it

  • Combine ingredients in A) and make a paste
  • rub paste into slices of eggplant
  • B)dip in egg batter then into bread crumbs
  • heat 1/3 cup olive oil in large skillet and add eggplant
  • cook approx 2 1/2 minutes each side over medium heat.
  • set aside on paper towels
  • iC) in a large oven pan, arrange half the eggplant slices in the bottom of pan
  • add a layer of sliced mozzarella cheese
  • then add a layer of sliced prosciutto
  • then add a layer of sliced provolone cheese
  • then put the other half of the eggplant slice on top
  • D) top with sliced mushrooms
  • pour sherry over top and place in preheated 350 degree oven
  • bake 30 minutes
  • Serve hot topped with warm marinara sauce (optional
