Pineapple Salsa Topped Halibut Recipe
PINEAPPLE SALSA TOPPED HALIBUT This recipe came from an estate sale. I obtained it when I purchased the family collection from the Brooks Estate in Richardson, Texas in 2006.

Ingredients
  • 20 ounces pineapple tidbits packed in pineapple juice drained
  • 1/4 cup chopped pimento drained
  • 1/4 cup finely chopped red onion
  • 1 small jalapeno pepper seeds and ribs removed finely chopped
  • 1/4 cup vegetable oil divided
  • 3 tablespoons rice wine vinegar
  • 2 tablespoons dark brown sugar
  • 3/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper divided
  • 4 halibut fillets

Directions
  1. Combine pineapple, pimento, onion, jalapeƱo, 2 tablespoons oil, vinegar and sugar.
  2. Stir in 1/4 teaspoon salt and 1/4 teaspoon pepper and stir well and refrigerate 30 minutes.
  3. Prepare grill then rinse fish and pat dry.
  4. Brush with remaining oil and sprinkle with remaining salt and pepper.
  5. Grill fish 5 minutes then turn gently with spatula and grill 5 minutes on the other side.
  6. Remove from grill and top with salsa then serve immediately.
