Quick And Easy Mexican Cornbread Recipe
A quick and easy mexican style cornbread. Full of cheese and flavor! Goes great with Chili , Soup or just by itself.

Ingredients
  • 1 cup self rising corn meal mix
  • 1 cup self rising flour
  • 1 fifteen ounce can creamed corn
  • 1 small can chopped green chilies
  • 1/4 cup minced onion
  • 1/4 cup minced jalapeno pepper
  • 1 egg
  • 1/4 cup sour cream
  • 1 TSPN canola oil ( or any cooking oil)
  • 1/2 cup milk
  • 2 cups shredded cheddar cheese

Directions
  1. Preheat oven to 400 degrees.
  2. Prepare a large cake pan or 8 inch round baking dish by spraying well with a vegetable or baking spray
  3. In large bowl combine dry ingredients
  4. Add next 8 ingredients, in order, mixing well after each
  5. Gently blend in cheese
  6. Pour into baking pan
  7. Bake at 400 degrees for 55 minutes or until top in golden brown and crisp
  8. Remove from oven
  9. Cover with Serving Dish and immediately turn over to remove from pan
  10. Slice and serve while warm and cheese is melted and wonderful!
