How to make it

  • Clean chicken and trim any excess skin and fat off. remove heart, liver, etc and rinse inside and out of chicken. pat dry.
  • place chicken in a large zip lock bag while preparing marinade
  • mince garlic and slice limes in half.
  • in a small mixing bowl, add the garlic and the juice of the limes
  • add cilantro, parsley, tequila, olive oil, salt and pepper and whisk
  • pour marinade over chicken and refrigerate for at least an hour
  • remove chicken from marinade and discard remaining.
  • place chicken on rotisserie and tie wings and drumsticks back.
  • place in rotiserrie and roast for 90 minutes.
  • baste chicken after juices start to pool on bottom, after about 45 minutes than every 15 minutes until done.
  • let chicken rest for 15 minutes before cutting and carving
  • when carving, i usually begin by cutting the chicken in halve.
  • i remove the back bone and discard.
  • i cut the wings and drumsticks off whole at the joints.
  • i cut the breasts off and slice in to thirds
  • i slice the thighs off and usually cut in half.
  • this will easy serve a family of 6.
