JKs Lime Tequila Roasted Chicken

- 1 - 4lb chicken. preferably one that is less than 5 lbs shopping list
- 4 limes shopping list
- 4 cloves garlic shopping list
- 3 tlbs dried cilantro shopping list
- 1 tlbs dried parsley shopping list
- 1 oz tequila shopping list
- 3 tlbs olive oil shopping list
- salt & pepper shopping list
How to make it
- Clean chicken and trim any excess skin and fat off. remove heart, liver, etc and rinse inside and out of chicken. pat dry.
- place chicken in a large zip lock bag while preparing marinade
- mince garlic and slice limes in half.
- in a small mixing bowl, add the garlic and the juice of the limes
- add cilantro, parsley, tequila, olive oil, salt and pepper and whisk
- pour marinade over chicken and refrigerate for at least an hour
- remove chicken from marinade and discard remaining.
- place chicken on rotisserie and tie wings and drumsticks back.
- place in rotiserrie and roast for 90 minutes.
- baste chicken after juices start to pool on bottom, after about 45 minutes than every 15 minutes until done.
- let chicken rest for 15 minutes before cutting and carving
- when carving, i usually begin by cutting the chicken in halve.
- i remove the back bone and discard.
- i cut the wings and drumsticks off whole at the joints.
- i cut the breasts off and slice in to thirds
- i slice the thighs off and usually cut in half.
- this will easy serve a family of 6.
